Buckwheat and vegetable paella

Varied ingredients and a lot of flavor for this easy-to-prepare vegetarian paella.


  • 1 onion
  • 1/2 eggplant
  • 1/2 bell pepper
  • 1 natural tomato
  • 1 tablespoon of tomato sauce
  • 1 cup of textured soy
  • Salt
  • Pepper
  • peppers
  • cumin
  • oregano and garlic powder
  • 200g buckwheat
  • vegetable broth


In a pan or paella we poach the onion, the red pepper and the eggplant, all in small pieces, add the natural tomato (also in pieces), salt, pepper and the rest of the spices, add a tablespoon of fried tomato.

When the sauce is ready, add the buckwheat and toast it for a couple of minutes, add the broth and now add the textured soy and cook it for about 20-25 minutes. until the wheat is done.
