I have thought that there are few things that some allergic children or adults can eat. For that reason I have started to experiment and I have achieved a few things and I think I have had good results.
Here I share the recipes of three good options of delicious sweet and healthy things, which you can make at home in just a little while.
COOKIES / CAKES
350 grams of flour are mixed with a pinch of salt, 7 tablespoons of sugar, 70 grams of water and 100 grams of cold lard. With Thermomix, set speed 6 for 15 seconds and without it, knead by hand until all the ingredients are well integrated. The dough is allowed to cool in the refrigerator for 20 minutes. After this time the dough is stretched out on a floured surface and the cookies are cut with shaped pasta cutters or with a cup. The cookies are placed on a baking sheet lined with parchment paper and baked at 180º until they have a light golden hue. They can be turned over so that they brown on both sides the same, since the side that is in contact with the plate is toasted earlier.
These cookies are very tasty and they are simple. In addition, as it is a broken paste, it is also used to make tartlets that can be filled with sweet (chocolate, jam, etc.) or salty (in this case you should not put more than a tablespoon of sugar)
4 sheets of neutral gelatin are put in cold water for 10 minutes until hydrated. Heat a little water (about 30 ml) and add the hydrated gelatin to dissolve it. Then 400 ml of rice cream, a little cinnamon powder, 20 g of vanilla sugar and 30 g of normal sugar are added. Mix everything well and remove from heat. Let it cool, first at room temperature and then in the fridge. When it has gelatinized, it is removed from the fridge and crushed, so it does not have that jelly bean texture and is made like a cream, and ready to enjoy !!!!
If you want chocolate custard, you just have to add cocoa powder at the same time as the cream.
If what you want is to make a thicker cream like pastry cream, you can put more gelatin sheets and it will serve to fill whatever you want.
100 g of cookies are crushed (if you don't have a grinder, put them in a bag and crush them with a kitchen roller)
60 gr of cocoa and 100 gr of sugar are added (the amount of sugar may vary depending on whether the cookies are very sweet or not)
Add 100 gr of Custard (from the previous recipe) and mix everything well, then cool in the fridge for an hour or two.
The truffles are molded into balls with their hands and put back in the fridge for 6 hours to finish hardening.
Before serving, they can be coated with colored noodles, cocoa or grated coconut.
They can also be kept in the freezer and battered just before serving.
I also did an experiment and I got a kind of chocolates, I did it by adding ChocoKrispies to the dough after cooling it the first time, and they look great !!!
