Many focus on eating lightly, on green salads and forget that there are many other types of salads, such as lentils. This legume is not always to be eaten hot.
Lentils are a food rich in iron with a contribution of 3.3 mg per 100 grams. They are also rich in fiber, which facilitates digestion and intestinal transit, as well as having high-quality plant proteins.
They are ideal for athletes and also for pregnant women due to their high concentrations of folic acid.
But lentils contain not only iron, but also large amounts of magnesium and vitamin B.
Lentils are an interesting option for vegan vegetarians due to their nutritional contribution. They can be eaten hot or cold as one more ingredient in salads.
Tip: To absorb the iron from lentils well, it is advisable to drink a squeezed lemon or orange juice before and after the dish containing lentils.
Ingredients (4 servings):
1/2 cup rice
1/2 cup lentils
1 small tomato
1 carrot girl
1/4 of white cabbage
Flax and chia seeds
Condiments for the dressing:
We cook the rice, the lentil and an egg. Let cool and place the rice and lentils in a container.
We add the cut tomato.
Then we add the grated carrot, the very small chopped cabbage and add the chopped egg.
Finally we add the flax and chia seeds.
Season with oil and salt and enjoy a hearty and rich salad.
Optional: You can add some mushrooms (mushrooms) cut into thin slices, raw or sautéed for a few minutes in oil, until they begin to brown.
