This dessert is exquisite and due to its creamy texture we could consider it to be a vegan version of the chocolate custard. It is a very easy and quick recipe to prepare, without the need for cooking of any kind, therefore it is almost an instant dessert.
The amount of sugar, or sweetener to make this recipe is to taste. Date syrup is recommended. The intention of the dessert is that the deep flavor of the purest cocoa stands out, so we hardly use a touch of honey. The tahini or tahini helps to give creaminess to a pudding that will be addictive to you.
Ingredients for 4 people:
- Avocado (heavy, peeled, pitted, ripe) 180 g
- Tahini 40 g
- Cocoa powder 30 g
- Dark chocolate 50 g
- Natural yogurt (soy or similar) 100 g
- Vanilla essence 5 ml
- Salt 1 g
- Lime or orange zest
- Agave or date syrup to taste (optional)
Melt the chocolate in a bain-marie, and let it temper a little. It is recommended that the yogurt and avocado are at a warm temperature so that there is no thermal shock.
Remove the pulp from the avocado, which should be very soft but not soggy. Process together with the tahini and cocoa. Blend into a paste.
Then add the melted chocolate, yogurt, vanilla, salt, and lime zest.
Blend, stir and grind again. Add agave syrup, date syrup, honey, sugar or sweetener to taste, and blend again until it has a homogeneous texture, without lumps.
Distribute in airtight containers and chill until serving time.
